生春巻き [Goi Cuon]

生春巻きは、「ゴイクォン／Goi Cuon」と呼ばれるベトナム南部の料理。ベトナム語で「Goi＝あえもの」、「Cuon＝巻く」を意味し、お米から作られるライスペーパーで、ミント、 バジル、しそなどのハーブと、レタスやもやしなどの生野菜、そしてゆで豚、ゆで海老、米麺のブン（Bun）を巻いて作ります。「具やタレにどんな種類があ るの？」とよく聞かれますが、伝統的な具材はこれが定番。タレは中国の甜麺醤（テンメンジャン）に似た甘い大豆味噌を油で炒めたにんにくや砂糖などと合わ せ、すりつぶした緑豆やピーナッツなどを加えてコクをプラス。さらにタマリンドの汁やお酢などを極少量加え、味をキリッと締めて作ります。お店や家によっ て秘伝の材料や配合があるようです。

　ライスペーパーは春巻き用と思っている人もいますが、ベトナムには元々、ライスペーパーに肉や魚の料理とブン、ハーブや生野菜をのせ、卓上で手巻きにす る食べ方があります。実はこちらが本来の方法なのですが、1回ずつ手で巻くため、時間のある時にしか食べられません。そこでスピーディーに食べられるよ う、あらかじめ巻き置くスタイルの「生春巻」が生まれたのです。

　 つまり、生春巻きはファーストフード。現地では屋台や市場、学生が立ち寄るおやつのお店などで売られています。しかし見た目の珍しさから、外国に紹介され る機会も多く、ベトナムの外国人観光客向けのレストランに置かれるようになりました。日本でもベトナム料理店の定番メニューとなっているので、高級料理と 思っている人も多いのではないでしょうか。

　 ところが最近では、ベトナムの外国人向けレストランに、ベトナム人客が多く来店するようになってきました。これらのお店の中には、具にスモークサーモンや 生魚を使ったり、マヨネーズをソースに使ったりした、ちょっと変わった生春巻きを置く店も出てきました。つまり、食べ慣れた味を好むベトナム人もまた、 シェフがもたらす新しい味を受け入れ始めたのです。しかしこれらの多くは日本で食べたことのあるアレンジ…。そう、日本の生春巻きはベトナムの最先端を 行っていたことになりますね。伝統的な味、新しい味、どちらもおすすめですが、これらのことを知っていれば、より生春巻きが味わい深くなるかも知れませ ん。

フォー [Pho] -その2-

ベトナムの米麺「フォー/Pho」、前号ではスープや具材について触れましたが、今回は「麺」のお話をしましょう。

　簡単に言えば、フォーとは、蒸して作った薄い米生地を幅広に切った麺。柔らかく蒸した生地を切るわけですから、日本の乾麺の様な「コシ」はありません。ベトナム人はむしろ、この絹のようにしなやかで、柔らかな食感を楽しむのです。

　まずは原料であるお米をたっぷりの水に漬けます。次に柔らかくなったお米を機械で粉砕、水を加えて程良いかた さの生地にします。その後、鍋の口に布をピンと張った専用の蒸し器の上に生地を適量のせ、専用のおたまの裏を使って生地を薄く引き伸ばしていきます。蓋を して蒸すこと数十秒、生地に火が通るとプルプルとした状態になり、これを冷まして幅広に裁断すれば、フォーの麺「バインフォー/Banh Pho」（Banh＝粉などから作る生地を加工したものの総称）の完成です。

　この麺は日持ちがしないので、製麺屋では常にその日の作りたての麺が売られ、その日のうちに食べ切ってしまい ます。日本で出回っているような乾麺のフォーは、現地では製麺所のない辺ぴな場所で食べられることはありますが、生麺（乾麺でないという意味）のフォーを 食べるのが普通です。

　また、フォーとは作る店やサイズ、厚さ、生地の配合が異なりますが、蒸したプルプルの米生地を切らず、炒めた ひき肉などの具をのせて巻いて食べれば蒸し春巻き「バインクオン/Banh Cuon」（Cuon＝巻く）、蒸した米生地を天日に干せばライスペーパー「バインチャン/Banh Trang（南部弁）」（Trang＝引き伸ばす）となります。

　ところでこのバインフォー、牛または鶏のダシで食べるか、油で揚げ焼きにするのが昔からの食べ方ですが、 フォーの本場のハノイでは、数年前から面白いフォー料理が流行っています。その名も巻きフォー「フォークオン/Pho Cuon」。「どんな料理？」と最初に名前を聞いた時は思いましたが、現物を見て「こうきたか～」と納得。蒸したフォー生地を裁断せずに四角くカット。炒 めた牛肉や香草をそれで巻いて、魚醤ヌックマム（Nuoc Mam）ベースのタレに付けて食べるのです。ハノイでは、市中心部の北側、チュオックバック（Truoc Bac）湖畔のグーサー（Ngu Xa）通り周辺に専門店が軒を連ねています。ベトナムを訪れた時は、昔ながらの生麺フォー、最近流行のフォー、どちらもチェックしてみて下さいね。

バインセオ [Banh Xeo]

「ベトナム風お好み焼き」という名で紹介されるこの「バインセオ/Banh Xeo」。実はお好み焼きとは似ても似つかず、パリパリでクリスピー。米粉にココナッツミルクと水を加えて作った生地は、ターメリック入りで黄色いのが特徴です。

　焼き方が面白く、油を熱した底の丸い中華鍋で少量の豚肉と海老を炒め、その中に生地を流し入れて手早く鍋を回 しながら薄く大きく広げます。そこにもやしや蒸した緑豆などをのせ、蓋をしてサッと蒸します。多めの油を注いで高温で調理するので、生地がパリッと揚げ焼 き状態になるのです。最後にこれを半分に折ると出来上がり。

　食べ方は適当な大きさに切り、リーフレタスやからし菜にのせ、大葉やドクダミ、バジルなどの香草とともに巻 き、タレに付けて食べます。タレは魚醤ヌックマム（Nuoc Mam）とレモン汁（または酢）、砂糖を混ぜた甘酸っぱいもの。青パパイヤとにんじんの甘酢漬けを入れたり、添えたりして食べます。たっぷりの野菜やハー ブ、爽やかなタレと合わせることで、油で焼き揚げた生地もサッパリと食べられるのです。

　このバインセオ、ホーチミン市や、日本のベトナム料理店などで食べられる大判タイプのものは、実はベトナム南 部風。地域が変わるとその土地に合わせて、姿や味が変化します。たとえばファンティエット（Phan Thiet）やムイネー（Mui Ne）では、ターメリックを使わない白いものがあり、小さめの手の平サイズで、漁師町らしくイカが入っていたりします。ホイアン（Hoi An）などの中部も手の平大。これを野菜やハーブだけでなく、ライスペーパーで包んで食べます。タレはこの地方の味噌を使った味噌ダレです。また、「バイ ンコアイ/Banh Khoai」と呼ばれる厚焼き生地のフエ風バインセオは、肉団子などがのり、半分に折らないオープン状のもの。タレは、「ヌックレオ/Nuoc Leo」と呼ばれる肉味噌ダレ。メコンデルタやヴンタウ（Vung Tau）などでは、ひと口サイズの「バインコット/Banh Khot」もあります。

　ところで、ハノイのガイドさんから「『バインセオが食べたい』というお客さんが多くて…」と愚痴られたことが あります。もともとベトナム北部では、バインセオを食べる習慣がありません。最近は地方の食べ物も人気で、専門店もできてきましたが、ハノイでバインセオ を食べるのは、大阪でもんじゃ焼を食べたい、というようなことなのかも。それほど日本人にとって、バインセオは人気なのですね。

5 ways to keep your apartment oganized at all times

I remember as a child when I asked my mother for my friend to come over, she would always state “Sure, as long as the house is cleaned up.” That exact moment would produce a frenzy of activity around the house, me racing against time to pick up everything so my mother would say yes. Ahhhh…. Those were the days. Now that I’m an adult, I don’t to have to deal with that when my friends come over. I want my apartment to already be kept up, so when a friend calls and says he/she is coming by I don’t have to worry.

Here are five foolproof ways I make sure this is accomplished for my apartment:

1. Make your bed as soon as you get up. As soon as I get out of bed, I make the bed. I feel like my room is extremely messy if the bed is. After all, the bed is usually the focal point of the bedroom; people tend to notice if that’s neat versus your vanity being kept up.

2. Unload your clean dishes from the dishwasher in the morning and make it a rule that if somebody uses a dish they are to load it into the dishwasher. If you don’t let dishes pile up, you won’t have a mess after dinner. And when the dishwasher is full, you can run it.

3. Clean up all spills immediately. That means on counter tops, on the stove, and on the floor when you are cooking. This will eliminate the hard scrubbing from food deposits sticking to the surfaces.

4. Make it a habit to take your shoes off at the front door when you come home. I have a shoe rack by the door for myself and guests to put their shoes. Doing this will keep dirt from being tracked in onto your floors or carpet, which will help them look beautiful longer! Remember, you want that security deposit back! J

5. Another thing people will notice when they come to your house is clutter. Make sure you have a spot for everything. When mail comes into the apartment, go through it immediately and throw away unnecessary items. Then, place your bills or other ‘keep’ items in their spot to go through when needed.

While I miss the good ole’ days from my youth, I certainly do not miss the frenzy of activity before a friend comes over. After all, it looks kinda bad when he/she shows up and I’m all sweaty & out of breath! J Hopefully these tips will help you whenever you are in the situation of needing a clean house on the fly.
